Been a while I tak update my Blog..been busy here and there..kalau tak busy pun, kena buat-buat buzy..visualise kata Cikgu I...and yet, betul ..Power of Visualize... Talking about Visualize, saya dulu sangat tidak sukakan apa-apa kek atau makanan bersumberkan buah atau sayur.. Tak boleh imagine how carrot boleh turn out menjadi kek? But it was many years ago..huuhuhu.. Since I started my baking life a year ago, I started to tried out a lots of cake, include this Carrot Cake, and guess what? I'm lovingggggggg it... It's totally far from my imagination! Oh kudus betul time tu! Ok...for those who haven't tried u shud..u shud..
Carrot Cake with Cream Cheese Frosting
2 Cups All Purpose Flour
2 tsp baking Soda
1/2 tsp Salt
2 tsp Ground Cinnamon
3 Eggs (A)
1 1/2 Cup Castor Sugar
3/4 Cup Corn Oil
3/4 Cup Buttermilk
2 tsp Vanilla
2 Cups Grated Carrot
1 Can Crush Pineapple
1 Can Flaked Coconut
1 Cup Chopped Walnut
Dried Apricot
Coconut Flakes
Cream Cheese Frosting
250gm Cream Cheese
125gm Butter
75gm Icing Sugar
1 tsp Lemon Juice
Pre-Heat Oven 165 C
Sift Flour,Baking Soda,Salt & Ground Cinnamon. Put a side.
Beat Eggs for 2 min beat in sugar,Oil,buttermilk & Vanilla on medium speed until smooth. Add flour mixture, beating low speed until blended. Fold in carrot,pineapple,flakes coconut & walnut.
Bake for 25-30 mins or until wooden pick inserted in centre comes out clean. Cool in pans for 5 minits and remove from pans. Cool in completely on wire racks. Spread Cream Cheese Frosting and sprinkle with dried apricot & Coconut Flakes.
Cream Cheese- Beat Cream Cheese until creamy, add in butter,icing sugar & lemon juice.
